Quinoa, black beans, and veggies baked in enchilada sauce with melty Cheddar - a delicious vegetarian quinoa bake.
Ingredients:
  • 1 cup quinoa
  • 1 small onion, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 jalapeno pepper, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.33333334326744 cup chopped fresh cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon lime juice
  • 1 teaspoon ground cumin
  • 1 (10 ounce) can enchilada sauce
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Add quinoa to boiling water in a saucepan. Cover, simmer on medium-low heat until quinoa is tender and water is absorbed, about 15-20 minutes.
  • In a skillet over medium heat, sauté onion, yellow bell pepper, orange bell pepper, jalapeno pepper, and garlic in olive oil until soft, approximately 10 minutes.
  • Combine black beans, pepper mixture, quinoa, cilantro, chili powder, lime juice, cumin, salt, and pepper in a bowl, then transfer to a casserole dish. Top with enchilada sauce, Cheddar cheese, and cover with aluminum foil before baking.
  • Bake in the preheated oven for 20 minutes, then uncover and bake until cheese is bubbling, for an additional 10 to 15 minutes.
