Colorful quinoa salad with black beans, preserved lemon, and zesty orange dressing.
Ingredients:
  • 2 cups cooked quinoa
  • 1.5 cups cooked black beans
  • 2 stalks celery, diced
  • 0.25 cup chopped red onion
  • 2 tablespoons chopped preserved lemon
  • 2 tablespoons extra-virgin olive oil
  • 0.5 orange, zested and juiced
  • 1 teaspoon apple cider vinegar
  • 0.5 teaspoon agave nectar
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper
  • 1 pinch ground coriander
Instructions:
  • Combine the quinoa, black beans, celery, onion, and preserved lemon in a large bowl.
  • Combine olive oil, 2 tablespoons orange juice, zest, apple cider vinegar, agave, salt, pepper, and coriander in a small bowl. Drizzle over the quinoa mixture and gently toss to combine.
