Satisfy any craving with this zesty Southwestern quinoa salad featuring black beans, corn, tomatoes, jalapeños, farmer's cheese, lime juice, and cilantro - perfect for any meal or gathering.
Instructions:
  • Prepare the quinoa: Combine rinsed quinoa, salt, and water in a pot, bring to a boil, cover, and simmer for 10-15 minutes until quinoa absorbs all water. Remove from heat, let sit for 5 minutes. Fluff with a fork in a large bowl to cool quickly.
  • Marinate red onions in lime juice to mellow their sharp flavor while quinoa cooks.
  • Combine the prepared black beans, corn, tomatoes, cheese, jalapeños, cilantro, and oil in a large bowl.
  • Combine the cooled quinoa and onions with the bean mixture. Stir in the red onion, lime juice, and season with salt, additional oil, or lime juice to your liking. Serve at room temperature.
