Quinoa salad with corn, black beans, salsa, and avocado.
Ingredients:
  • 2 avocados, cut into cubes
  • 0.5 cup quinoa
  • 1 (15 ounce) can reduced-sodium black beans, drained and rinsed
  • 2 ears corn, kernels cut from cob
  • 4 cups fresh salsa
Instructions:
  • In a small saucepan, bring quinoa and water to a boil, then simmer on medium-low heat until water is absorbed, approximately 15 minutes.
  • Combine black beans and corn in a spacious bowl; mix in cooked quinoa. Divide the quinoa mixture evenly into 4 bowls and garnish with salsa and avocado on top before serving.
