Spicy Quinoa, Bean, and Pepper Salad

Quinoa picnic salad with peppers, black beans, and onions - perfect hot or cold for picnics.
Ingredients:
  • 1 teaspoon chile oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 large red bell pepper, chopped
  • 0.75 cup red quinoa
  • 1.5 cups vegetable broth
  • 0.5 teaspoon chipotle pepper powder, or more to taste
  • 0.25 teaspoon cayenne pepper
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn kernels
Instructions:
  • In a saucepan, warm the oil over medium heat. Sauté onion and garlic until lightly browned, about 5 to 7 minutes. Add red pepper and cook until slightly tender, about 1 to 2 minutes.
  • Combine quinoa and onion mixture, then add vegetable broth, chipotle pepper powder, and cayenne pepper. Bring to a boil, cover, reduce heat, and simmer for 20 minutes until quinoa is tender.
  • Mix in the black beans and corn with the quinoa mixture. Let it simmer until the beans and corn are heated through, approximately 5 minutes.
