Spicy vegan quinoa with carrots, bell pepper, white beans, tomatoes, and giardiniera for a quick and flavorful one-pot meal.
Ingredients:
  • 1 cup matchstick-cut carrots
  • 3 stalks celery, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, chopped
  • 1 (10 ounce) can white beans, drained and rinsed
  • 1 (10 ounce) can diced tomatoes, with liquid
  • 1 cup vegetable broth
  • 1 cup quinoa
  • 4 ounces hot giardiniera
  • 1 teaspoon garlic powder
Instructions:
  • In a deep pan over medium-high heat, the colorful combination of carrots, celery, bell pepper, and onion sizzles in hot oil until just tender, about 5 minutes. Stir in beans, tomatoes, broth, quinoa, giardiniera, garlic powder, salt, and pepper to create a flavorful mixture. Bring to a boil, then lower the heat and let simmer until the liquid is absorbed, approximately 20 minutes.
