Quick and tasty tangy black bean tacos with salsa verde.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (7 ounce) can green salsa (salsa verde)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 6 taco shells
  • 2 ounces shredded Mexican cheese blend
  • 1 tomato, diced
  • 1 avocado, sliced
  • 1 cup shredded lettuce
Instructions:
  • In a saucepan over medium-low heat, sauté onions in olive oil until tender, about 5 minutes. Add black beans, green salsa, garlic powder, chili powder, and cumin. Simmer on low heat until thickened, 5 to 10 minutes.
  • Top with taco shells, Mexican cheese blend, tomato, avocado, and shredded lettuce before serving.
