Spicy black bean meatloaf with cheddar, corn, and jalapeño for a quick, flavorful vegetarian dinner.
Ingredients:
  • cooking spray
  • 3 (15 ounce) cans black beans, drained and rinsed
  • 1 sleeve buttery round crackers (such as Ritz®), crushed
  • 1 cup shredded Cheddar cheese
  • 1 cup diced multi-colored bell peppers
  • 0.66666668653488 cup frozen corn kernels
  • 0.5 cup diced onion, or to taste
  • 24 slices jalapeno pepper, diced
  • 1 egg white
  • 1 (1 ounce) packet hot taco seasoning mix
  • 1 (1 ounce) package spicy Ranch-style seasoning mix
Instructions:
  • Preheat the oven to 350°F (175°C), then generously coat an 8x13-inch baking dish with cooking spray.
  • In a large bowl, effortlessly mash black beans until smooth. Add crackers, Cheddar cheese, bell peppers, corn, onion, jalapeño pepper, egg white, taco seasoning, and Ranch seasoning, then mix everything together until well combined. Lastly, gently spoon the mixture into the baking dish and shape it into a loaf.
  • Cook in the oven until perfectly done, for 45 to 60 minutes.
