Roasted black bean burgers

Delicious black bean burgers with tangy salsa, mango, avocado, and extra Tabasco. Packed with bold flavors and satisfying to devour.
Ingredients:
  • 1½ red onions
  • 200 g mixed mushrooms
  • 100 g rye bread
  • ground coriander
  • 1 x 400 g tin of black beans
  • olive oil
  • 40 g mature Cheddar cheese
  • 4 soft rolls
  • 100 g ripe cherry tomatoes
  • 1 lime
  • chipotle Tabasco sauce
  • 1 ripe mango
  • 1 ripe avocado
  • 4 tablespoons natural yoghurt
  • 4 sprigs of fresh coriander
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Combine 1 peeled onion, mushrooms, rye bread, and 1 teaspoon of ground coriander in a food processor and blend until finely chopped. Add black beans and pulse. Season with sea salt and black pepper. Shape the mixture into 4 patties, roughly 2.5cm thick. Coat with oil, sprinkle with ground coriander, and place on an oiled baking tray. Roast for 25 minutes until crispy, topping with Cheddar towards the end. Warm the rolls. Combine chopped onion, tomatoes, lime juice, Tabasco, and season in a bowl. Slice mango and avocado. Assemble the burgers with yoghurt, salsa, mango, avocado, and coriander. Top with remaining salsa and Tabasco. Serve with oven-roasted chips.
