Black Bean Soup with Avocado Salsa

Black bean and fire-roasted tomato soup with avocado salsa - a quick and delicious dinner in just 20 minutes!
Ingredients:
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup water
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1/2 cup chipotle salsa
  • 1 teaspoon ground cumin
  • 1 cup diced peeled avocado
  • 1/2 teaspoon grated lime peel
  • 1 tablespoon fresh lime juice
  • 2 tablespoons finely chopped fresh cilantro
  • 1/8 teaspoon salt
  • Reduced-fat sour cream, if desired
Instructions:
  • In a 2-quart saucepan, gently mash the beans using a potato masher. Add water, tomatoes, chipotle salsa, and cumin. Bring to a boil over high heat, then lower the heat. Cover and simmer for 8 minutes, stirring occasionally. Uncover and simmer for an additional 2 minutes until the soup slightly thickens.
  • In a small bowl, delicately combine avocado, lime zest, lime juice, cilantro, and salt.
  • Divide the soup evenly among 4 bowls. Spoon 1/4 cup of avocado salsa on top of each serving and finish with a dollop of sour cream for a delicious finish.
