Elevate your salad game with a gourmet Asian salad featuring savory roasted shiitake mushrooms.
Ingredients:
  • 12 fresh shiitake mushrooms (see Notes)
  • 250g snow pea sprouts, long ends trimmed
  • 150g sugar snap peas, trimmed, blanched, refreshed
  • 250.00 ml canned black beans, rinsed, drained (see Notes)
  • 125ml vegetable oil
  • 20.00 ml sesame oil
  • 60ml rice vinegar
  • 60ml soy sauce
  • 5.20 gm hot chilli sauce
  • 16.00 gm brown sugar
Instructions:
  • Preheat the oven to 375°F.
  • Combine dressing ingredients and whisk until well blended.
  • Coat shiitake mushrooms with a light layer of dressing. Bake in the oven for 10 minutes, flipping halfway through. Allow to cool before serving.
  • Toss the Brussels sprouts, peas, and beans in the remaining dressing. Top the salad with roasted shiitake mushrooms before serving.
