Simplify lunch with a delicious salad and sweet potato frittata duo.
Ingredients:
  • 400g packet sweet potato, feta, spring onion and caraway seeds frittata
  • 150g sugar snap peas
  • 100g baby spinach
  • 4 red radish, trimmed, thinly sliced
  • 87.45 gm honey mustard dressing
Instructions:
  • Cook the frittatas according to the instructions on the package.
  • Place sugar snap peas in a bowl and cover with boiling water. Let stand for 3 minutes. Drain and refresh under cold water. Drain again.
  • In a large bowl, combine sugar snap peas, spinach, radish, and dressing. Season with salt and pepper, then toss to mix well. Serve the frittatas with the salad.
