Pork & sugar snap pea stir fry

Whip up a quick and delicious pork stir fry for a speedy weeknight dinner. Ready in just 25 minutes!
Ingredients:
  • 48.80 gm oyster sauce
  • 48.80 gm fish sauce
  • 21.00 gm fresh lime juice
  • 1 tsp Changs sesame oil
  • Olive oil spray
  • 1 (about 350g) pork fillet, Heart Smart, sliced thinly on the diagonal
  • 20.00 ml grated fresh ginger
  • 1 bunch broccolini, cut into florets
  • 1 red capsicum, deseeded, sliced
  • 150g pkt oyster mushrooms, large ones halved
  • 200g sugar snap peas, trimmed and strings removed
  • 5 shallots, sliced into 3 cm lengths
  • Steamed rice, to serve
Instructions:
  • Mix the oyster sauce, fish sauce, lime juice, and sesame oil together and leave it to the side.
  • Lightly coat a wok with oil spray and heat over high heat. Cook the pork in batches for 1 minute on each side until golden. Set aside. Coat the wok with oil spray again and add ginger, broccolini, capsicum, mushrooms, peas, and shallots. Stir-fry for 5 minutes until just tender.
  • Add the pork back to the pan with the sauce mixture and stir for 1 minute until heated through. Serve right away with steamed rice.
