Slow-cooked ginger pork shoulder served with fresh sugar snap peas, green onions, and ramen noodles. Perfect for a quick and delicious weeknight meal!
Ingredients:
  • 1 pound boneless pork shoulder, cubed
  • 2 teaspoons grated fresh ginger root
  • 2 (3 ounce) packages chicken flavored ramen noodles with seasoning packets
  • 3 cups water
  • 1.5 cups sugar snap peas
  • 3 green onions, chopped
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
Instructions:
  • Add the pork and ginger to the slow cooker, sprinkle with the seasoning packets from the ramen noodles, and pour in the water. Cover and cook on Low for 6 to 8 hours.
  • About 10 minutes before serving, increase the slow cooker to High heat. Break the ramen noodle bundles into quarters and add them to the slow cooker along with the sugar snap peas and green onions. Combine soy sauce and cornstarch in a small cup, then stir into the slow cooker. Cover and cook for an additional 5 minutes before serving immediately.
