Berry Summer Salad: A vibrant and refreshing mix of fresh berries.
Ingredients:
  • 0.5 pound sugar snap peas, trimmed
  • 1 cup fresh raspberries
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons olive oil
  • 1 pinch sugar
  • salt and pepper to taste
  • 1 cup fresh blueberries
  • 2 cups torn mixed salad greens
Instructions:
  • 1. Boil a pot of water until bubbling. Add snap peas and cook for 1-2 minutes. Drain, rinse with cold water, and set aside.
  • Strain 1 1/2 tablespoons of raspberries over a bowl, crush them with a wooden spoon, discard the pulp, and combine the raspberry juice with vinegar, olive oil, sugar, salt, and pepper.
  • Combine the dressing with the snap peas, remaining raspberries, and blueberries in a large bowl. Chill in the refrigerator for at least 30 minutes. Add greens and toss right before serving.
