Strawberry and sugar snap pea salad with raspberry Dijon dressing.
Ingredients:
  • 1 cup sugar snap peas
  • 1.5 tablespoons extra virgin olive oil
  • 2 teaspoons raspberry vinegar
  • 0.5 teaspoon Dijon mustard
  • 4 cups sliced fresh strawberries
Instructions:
  • 1. Boil water in a pot and insert a steamer. Steam peas until bright green, about 30 seconds. Drain, rinse with cold water, and set aside.
  • Combine the olive oil, raspberry vinegar, and Dijon mustard in a bowl, whisking until fully blended. Let the flavorful dressing rest for a few minutes.
  • In a large bowl, mix sugar snap peas and strawberry slices. Drizzle dressing over the mixture, gently tossing to coat evenly. Enjoy right away or refrigerate for up to 1 hour.
