Elevate yellow rice with black beans, corn, and zesty lime juice for a tantalizing meal.
Ingredients:
  • 1 (8 ounce) package yellow rice mix
  • 1.25 cups water
  • 2 tablespoons olive oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 2 teaspoons lime juice
  • 1 teaspoon ground cumin
Instructions:
  • In a saucepan over high heat, let the rice, water, and olive oil come to a boil. Lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • Combine the beans, corn, fresh lime juice, and cumin in a large bowl. Add the cooked rice, mix well, and serve.
