Tender pork with smoky flavor paired with sweet grilled vegetables for a nutritious and energizing meal. Great source of B-vitamins, iron, magnesium, and zinc.
Ingredients:
  • 1 orange, rind finely grated, juiced
  • 20.00 ml red wine vinegar
  • 2.50 gm smoked paprika
  • 2.50 gm ground cumin
  • 1 garlic clove, crushed
  • 7.20 gm honey
  • 1 long fresh red chilli, deseeded, finely chopped
  • 4 (about 125g each) pork loin steaks
  • 2 large corncobs, husk and silk removed
  • 250g baby capsicums, halved, deseeded
  • 400g can black beans, rinsed, drained
  • 100g baby rocket leaves
Instructions:
  • In a shallow glass or ceramic dish, mix together the orange rind, orange juice, vinegar, paprika, cumin, garlic, honey, and chili. Set aside 2 1⁄2 tablespoons of the marinade for the dressing. Add the pork to the remaining marinade, making sure it's coated. Cover and refrigerate for 30 minutes to marinate.
  • Heat up the barbecue grill or chargrill to medium-high heat, then lightly coat the corn and capsicum with oil. Grill the corn for 6-8 minutes, turning occasionally, and the capsicum for 2-3 minutes per side until both are tender and slightly charred.
  • After marinating, remove pork from the marinade and grill for 3 minutes on each side until done to your preference. Transfer to a plate, lightly cover with foil, and let it rest for 3 minutes before slicing.
  • Cut the kernels off the corn cobs and transfer them to a large bowl. Add the bell pepper, black beans, and arugula, then toss everything together. Finish the salad by adding the pork on top and drizzling with the dressing.
