"Wow the bake sale with triple-layered brownie-cheesecake cookie bars."
Ingredients:
  • 1 (19.8 ounce) package brownie mix
  • 0.5 cup vegetable oil
  • 0.25 cup strong brewed coffee
  • 1 egg
  • 20 ounces cream cheese, at room temperature
  • 0.5 cup white sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup mini chocolate chips
  • 10 tablespoons unsalted butter, at room temperature
  • 0.66666668653488 cup light brown sugar
  • 6 tablespoons white sugar
  • 0.25 teaspoon salt
  • 1.5 cups all-purpose flour
  • 2 cups full-size chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then line and lightly grease a 9x13-inch baking dish with aluminum foil.
  • Mix together the brownie mix, oil, coffee, and egg in a bowl until well combined. Spread the mixture evenly into the prepared baking pan for the brownie layer.
  • In a bowl, whip cream cheese and sugar until they are fluffy. Incorporate eggs and vanilla extract until fully mixed. Add mini chocolate chips, then carefully spread mixture over brownie layer.
  • In a bowl, cream together butter, light brown sugar, and white sugar until light and fluffy like regular cookie dough. Mix in vanilla extract and salt. Stir in flour until combined. Gently mix in full-size chocolate chips until mixture is crumbly. Sprinkle the mixture evenly over the cheesecake layer to cover the entire surface, then lightly press down.
  • Bake in the preheated oven for 30 minutes until firm and cooked through.
  • Chill in the refrigerator for 2 hours in the pan. Then, freeze while still in the aluminum foil until fully cooled, for 8 hours or overnight. Once chilled, cut into 36 squares after removing the foil.
