Delicious black-eyed pea and ham dip with tomato, green onions, and parsley, perfect for a quick appetizer with corn chips, ready in only 25 minutes.
Ingredients:
  • 1/2 cup diced cooked ham
  • 2 cans (15 oz each) black-eyed peas, drained, rinsed
  • 3/4 cup water
  • 1 large tomato, finely chopped (1 cup)
  • 2 medium green onions, sliced (2 tablespoons)
  • 1 stalk celery, finely chopped (1/2 cup)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 to 2 tablespoons cider vinegar
  • Corn chips, if desired
Instructions:
  • Begin by spraying a large skillet with cooking spray and heating it over medium-high heat. Add the ham and cook for 3 to 5 minutes, stirring frequently until it's lightly browned. Next, stir in the black-eyed peas and water. Reduce the heat to medium and cook for 8 minutes, stirring occasionally until the liquid is reduced by three-fourths. Finally, partially mash the peas to your desired consistency using the back of a spoon.
  • Combine ripe tomatoes, crisp onions, fresh celery, fragrant parsley, high-quality oil, and zesty vinegar in a small bowl.
  • Transfer the cozy pea mixture into a serving dish and generously layer the zesty tomato mixture on top. Enjoy with a side of crunchy corn chips.
