Southern-style black-eyed peas and ham - a delicious New Year's tradition.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 cup chopped cooked ham
  • 1 cup finely chopped onion
  • 0.5 teaspoon hot sauce
  • 2 (15 ounce) cans black-eyed peas, undrained
  • 1.5 cups cooked rice
  • 0.5 teaspoon salt
Instructions:
  • In a large skillet over medium heat, warm up oil. Add in ham, onion, and hot sauce. Sauté until the onions are tender, approximately 3 minutes.
  • Stir in the peas with their flavorful juices, add the rice and salt. Lower the heat to medium-low, cover, and let it all simmer until everything is warmed through, approximately 5 minutes.
