Savory black eyed peas and corn salad with tangy dressing that improves over time.
Ingredients:
  • 1 (15 ounce) can black-eyed peas, drained
  • 1 (10 ounce) package frozen corn kernels, thawed
  • 2 tablespoons chopped pimento peppers
  • 0.5 cup chopped celery
  • 2 tablespoons minced onion
  • 0.25 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon pepper
  • 0.25 cup vegetable oil
Instructions:
  • Mix black-eyed peas, corn, pimentos, celery, and onion in a bowl. In another bowl, whisk vinegar, sugar, Worcestershire sauce, garlic salt, and pepper. Slowly whisk in vegetable oil until dressing is creamy. Combine dressing with vegetables until coated. Chill for 4 hours before serving.
