Comforting black-eyed peas cooked with crispy bacon, celery, and onion in flavorful chicken broth.
Ingredients:
  • 4 slices bacon, or more to taste
  • 1 large onion, chopped
  • 1 stalk celery, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups dry black-eyed peas - sorted, rinsed, and drained
  • 0.25 teaspoon ground black pepper
Instructions:
  • Fry bacon in a 5-quart Dutch oven over medium-high heat, turning occasionally, until golden and crunchy, for about 10 minutes. Drain on paper towels and crumble once cooled.
  • In a skillet, sizzle bacon drippings over medium-high heat. Saute onion, celery, and garlic until tender, around 5 minutes. Stir in chicken broth, black-eyed peas, salt, and pepper. Let bubble, skimming off any foam as needed.
  • Simmer gently, then add bacon and adjust seasoning to taste. Cover and cook until peas reach desired tenderness, which may take 30 minutes to 1 hour.
