Slow Cooker Southern-Style Black-Eyed Peas: Cook with bacon, onion, and garlic for a delicious New Year's dish.
Ingredients:
  • 8 slices bacon, or more to taste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups dry black-eyed peas
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Fry bacon in a large skillet over medium-high heat, flipping occasionally, until crispy and golden brown, approximately 10 minutes. Place on paper towels to drain and crumble once cooled. Reserve the flavorful drippings in the skillet.
  • Cook onion and garlic in bacon drippings until tender, about 5-7 minutes over medium to medium-high heat.
  • In a slow cooker, mingle chicken broth, black-eyed peas, salt, and pepper. Toss in crumbled bacon, sautéed onion and garlic blend, along with any leftover bacon drippings. Cover and cook on Low until peas are tender, about 4 to 6 hours.
