Spicy slow cooker black-eyed peas with ham, bacon, and colorful bell peppers - a hearty and flavorful side dish.
Ingredients:
  • 6 cups water
  • 1 cube chicken bouillon
  • 1 pound dried black-eyed peas, sorted and rinsed
  • 8 ounces diced ham
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 1 red bell pepper, stemmed, seeded, and diced
  • 1 jalapeno chile, seeded and minced
  • 2 cloves garlic, diced
  • 1.5 teaspoons cumin
  • 1 teaspoon ground black pepper
  • salt, to taste
Instructions:
  • Prepare all the ingredients.
  • Fill the slow cooker with water and drop in the bouillon cube, stirring until completely dissolved.
  • Add a flavorful mix of black-eyed peas, ham, bacon, onion, bell pepper, jalapeño, garlic, cumin, black pepper, cayenne pepper, and salt into the pot.
  • Slowly simmer the beans, covered, until they are tender, for 6 to 8 hours.
  • Savor while piping hot!
