Slow cooker black-eyed peas and ham hocks cooked with garlic and onion for a comforting New Year's Day meal to share with loved ones.
Ingredients:
  • 1 pound dried black-eyed peas
  • 3 smoked ham hocks, or more to taste
  • 6 cups water, plus more as needed
  • 1 onion, chopped small
  • 1 large clove garlic, crushed
  • 0.25 teaspoon red pepper flakes
  • 0.125 teaspoon white sugar
  • salt to taste
Instructions:
  • Place black-eyed peas in a spacious container and cover with cold water, ensuring they are submerged by a few inches; soak for 8 hours or overnight.
  • In a stockpot, add ham hocks and 6 cups of water. Bring to a boil, then lower heat, cover, and simmer until the meat is tender and falling off the bone, around 90 minutes. Take out the ham hocks for later use. Chill the ham stock in the refrigerator for 8 hours or overnight.
  • Thoroughly rinse and drain black-eyed peas, then place them in a slow cooker. Nestle a cooked ham hock into the peas and add onion, garlic, red pepper flakes, and sugar.
  • Remove the thickened fat layer from the ham stock and discard. Transfer the stock to the slow cooker and add water until the peas are covered by 1 1/2 inches.
  • Slow cook for 14 hours on Low heat, then season with salt to taste.
