Indulge in decadent chocolate cake with luscious cherry cream filling - a sweet gesture for your special someone.
Ingredients:
  • 125g unsalted butter, chopped
  • 330g caster sugar
  • 25g cocoa powder
  • 1.25 gm bicarbonate of soda
  • 400g dark chocolate, chopped
  • 225g self-raising flour
  • 20.00 gm arrowroot
  • 600.00ml thickened cream
  • 40.00 ml kirsch (see notes)
  • Maraschino cherries, to decorate (optional)
  • 400g can pitted sour cherries, drained, juice reserved
  • 7.50 gm arrowroot
  • 6.00 gm icing sugar
Instructions:
  • Preheat your oven to 180C, then grease and line a 20cm deep springform cake pan.
  • In a large saucepan over medium heat, combine butter, sugar, cocoa, bicarbonate of soda, 60g chocolate, and 1 cup (250ml) water. Stir until melted and well combined, then simmer on medium-low heat for 3 minutes until smooth and slightly thickened. Let it cool for 10 minutes before using.
  • Combine the eggs, flour, and arrowroot into the chocolate mixture, then transfer the mixture into the pan and bake for 30 minutes or until a skewer comes out clean when inserted into the center. Allow it to cool briefly, then invert onto a wire rack to cool completely.
  • To prepare the ganache icing, heat the cream in a small saucepan over medium heat until almost boiling. Pour the hot cream over the remaining 340g of chocolate in a bowl and stir until smooth. Let it cool slightly before using.
  • To make the filling, heat cherry juice in a small saucepan over medium heat. Mix arrowroot with a splash of cold water, then add to the juice. Cook and stir for 2-3 minutes until thickened. Allow to cool. Using electric beaters, whip cream and icing sugar until stiff peaks form.
  • Slice the cake into 4 layers. Start by placing one layer on a serving plate and then generously drizzle it with one-third of the kirsch and a splash of cherry syrup. Cover it with one-third of the whipped cream and add some sour cherries on top. Repeat the layering process, ending with a cake layer. Finish off by spreading ganache over the cake and decorating it with maraschino cherries.
