Black olive and feta potato mash

Elevate dinner with a creative mashed potato twist.
Ingredients:
  • 1kg potatoes (see note), peeled, diced
  • 75g butter, chopped
  • 175ml milk or pouring cream, warmed
  • 80g pitted kalamata olives, finely chopped
  • 80g feta, crumbled
  • 9.20 gm extra-virgin olive oil, to serve
Instructions:
  • Boil potatoes in a pot of salted water over medium-high heat until tender, approximately 10 minutes. Drain in a colander.
  • Place the potatoes back into the warm saucepan and gently shake over low heat for about 30 seconds until any extra moisture evaporates. Remove from heat.
  • Roughly mash potatoes using a potato masher, then gradually incorporate butter until smooth. Pour in milk or cream and beat until fluffy with a wooden spoon. Season with pepper, then gently fold in olives and feta. Drizzle with oil and serve.
