Black rice and papaya salad

Vibrant red papaya elevates this quick side salad with its juicy sweetness.
Ingredients:
  • 2 x 250g pkts microwavable black rice
  • 1/2 red papaya, peeled, seeded, thinly sliced
  • 1/2 bunch asparagus, woody ends trimmed, thinly sliced
  • 1 spring onion, thinly sliced
  • 62.50 ml mint leaves
  • 40.00 ml sunflower seeds, toasted
  • 28.60 gm honey
  • 1 long red chilli, chopped (optional)
  • 42.00 gm lime juice
  • 60ml olive oil
Instructions:
  • Cook the rice per the instructions on the packet. Transfer the cooked rice onto a spacious serving plate and allow it to cool.
  • Place the papaya, asparagus, spring onion, mint, and sunflower seeds elegantly over the rice on the plate.
  • In a screw-top jar, mix honey, chili (if using), lime juice, and oil. Shake vigorously until fully combined. Season with salt and pepper. Drizzle over the salad before serving.
