Elevate rice and beans with zesty garlic, fragrant oregano, and colorful red bell pepper for a mouthwatering twist.
Ingredients:
  • 2 cups uncooked regular long-grain white rice
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 1 tablespoon finely chopped garlic (3 to 4 medium cloves)
  • 3 teaspoons dried oregano leaves
  • 1 teaspoon crushed red pepper flakes
  • 2 cans (15 oz each) Progresso™ black beans, undrained
  • 1/4 cup diced red bell pepper
Instructions:
  • Prepare the rice according to the package instructions.
  • In a large saucepan over medium heat, sauté garlic, oregano, and red pepper flakes in oil for 1 to 2 minutes, stirring often.
  • Add the beans and bring to a boil. Reduce the heat and let it simmer for 10 minutes without covering, stirring occasionally to blend the flavors. Serve over rice and top with bell pepper before serving.
