Mexican Rice Casserole with Beef and Pork

"Spicy pork and beef casserole with peppers, black beans, green chiles, and cheesy topping - perfect for a group!"
Ingredients:
  • 0.25 cup olive oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 (4 ounce) can chopped green chilies
  • 0.25 (4 ounce) can diced jalapeno peppers, or to taste
  • 2.5 cups uncooked white rice
  • 2 cups chicken broth
  • 1 (14.5 ounce) can petite diced tomatoes
  • 1.5 teaspoons Southwest seasoning
  • salt and ground black pepper to taste
  • 1 tablespoon fresh lime juice
  • 1 pound ground pork
  • 0.5 pound ground beef, or more to taste
  • 0.5 (1 ounce) packet taco seasoning, or to taste
  • 2 teaspoons chili powder
  • 1.5 teaspoons ground cumin
  • 1 (14 ounce) can black beans, drained
  • 1 bunch green onions, chopped
  • 0.5 small bunch fresh cilantro, chopped, or to taste
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a Dutch oven over medium-high heat, heat olive oil. Sauté green bell pepper, red bell pepper, onion, and garlic until fragrant, about 1 minute. Add green chiles and jalapenos; cook until starting to soften, for 3 to 4 minutes. Stir in rice; cook until coated in oil for about 3 minutes. Pour in broth, tomatoes, Southwest seasoning, salt, and pepper; bring to a boil. Stir in lime juice and cover with a lid.
  • Bake in the preheated oven for 10 to 15 minutes while you prep the meat.
  • 1. Preheat a skillet over medium-high heat. Cook pork and beef until browned and crumbly, about 5 to 7 minutes. Stir in taco seasoning, chili powder, and cumin; season with salt and pepper. Add black beans and mix well.
  • Take the rice out of the oven and combine it with the meat mixture. Drizzle a couple of tablespoons of water over the dish. Bake until the rice is cooked but still slightly firm, for around 20 to 25 minutes. Stir in the green onions and cilantro, then add a layer of Cheddar and mozzarella cheese on top. Place the casserole back in the oven and bake until the cheese is gooey, approximately 5 more minutes.
