Spicy garlic cumin black beans and rice - a flavorful, budget-friendly vegetarian meal or delicious side dish.
Ingredients:
  • 1 teaspoon olive oil
  • 0.75 cup uncooked white rice
  • 1.5 cups low sodium, low fat vegetable broth
  • 3.5 cups canned black beans, drained
  • 1 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper
Instructions:
  • 1. Heat oil in a saucepan over medium-high heat until shimmering. Cook onion and garlic until onion has softened, about 4 minutes. Add rice and cook to coat for 2 minutes.
  • Pour in the flavorful vegetable broth and bring it to a gentle boil. Cover the pot, lower the heat to a simmer, and let it cook until all the liquid is absorbed, approximately 20 minutes.
  • Combine the beans, cumin, and cayenne, and cook until the beans are heated through.
