Crispy bacon black-eyed pea patties with shallots and roasted red peppers, pan-fried to perfection in under 10 minutes.
Ingredients:
  • 0.5 pound bacon
  • 3 cups canned black-eyed peas, rinsed and drained
  • 0.33333334326744 cup chopped roasted red peppers
  • 2 tablespoons minced shallot
  • 3 tablespoons all-purpose flour, or as needed
  • salt and black pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
Instructions:
  • Fry bacon in a large, deep skillet over medium-high heat, rotating occasionally, until perfectly crispy, approximately 10 minutes. Transfer to a paper towel-lined plate to absorb excess fat.
  • In a bowl, crush black-eyed peas with a fork. Add crumbled bacon, red peppers, and shallot, stirring well. Mix in sufficient flour for the mixture to bind together. Season with salt and pepper, then shape into four patties of equal size.
  • In a large skillet over medium heat, melt the butter with oil until sizzling. Cook the patties until they're beautifully golden and crispy, approximately 4 minutes on each side.
