Deluxe Blackberry and Blueberry Cobbler with White Chocolate Chips, best served with vanilla ice cream.
Ingredients:
  • 1 (6 ounce) container fresh blueberries
  • 1 (6 ounce) container fresh blackberries
  • 0.5 cup orange juice
  • 3 tablespoons white sugar
  • 1 cup all-purpose flour
  • 1.5 tablespoons baking powder
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1.5 tablespoons vanilla extract
  • 0.5 cup miniature white chocolate chips
  • 0.5 cup brown sugar
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then give your 8x8-inch baking dish a quick spritz with cooking spray.
  • Combine fresh blueberries, ripe blackberries, tangy orange juice, and 3 tablespoons of white sugar in a bowl. Let the vibrant mixture sit for 20 to 30 minutes for the flavors to meld and the juices to develop.
  • Combine flour and baking powder in a bowl, whisk until well mixed. In another bowl, blend sugar, melted butter, egg, and vanilla extract until smooth. Gradually mix in flour mixture to create a smooth batter.
  • Smooth a thin layer of batter onto the bottom of the prepared baking dish. Add the berry mixture and juices on top. Pour the remaining batter over the berries, spreading it evenly. Sprinkle white chocolate chips and brown sugar on top.
  • Bake until the cobbler is golden brown, filling is bubbling, and chips have melted, about 30-35 minutes in the preheated oven.
