Summer Berry Banana Terrine: Gelatin-white grape base with fresh fruit.
Ingredients:
  • 2 envelopes (1/4 ounce each) unflavored gelatin
  • 2 cups white grape juice, divided
  • 1/2 cup white granulated sugar
  • 6 cups of mixed fresh berries and slices of banana (berries can include blueberries, raspberries, blackberries, and sliced or quartered strawberries)
Instructions:
  • Begin the magic: Pour 1/4 cup of white grape juice into a small bowl. Sprinkle the gelatin over the juice and allow it to soften for 2 to 3 minutes.
  • Prepare grape juice gelatin base: Combine 1/4 cup of white grape juice and 1/2 cup of sugar in a saucepan. Heat over medium-high heat until sugar dissolves. Remove from heat and mix in gelatin until dissolved. Add the remaining 1 1/2 cups of grape juice and stir.
  • Place the berries and banana slices in a 4x8 loaf pan, then generously pour the grape juice mixture over them allowing the fruits to soak in the flavorful gelatin. Gently press down on the fruits to ensure they are fully submerged in the mixture.
  • Refrigerate: Cover with plastic wrap and chill until firm, about 3 hours.
  • To un-mold, create a hot water bath by filling a basin halfway with hot water. Gently lower the loaf pan into the water for 5 to 8 seconds to melt the gelatin at the edge. Use a dull knife to loosen the edges. Place a serving platter upside down on top of the loaf pan and flip over. Shake gently to release the mold, then slice and serve.
