Indulgent baked scones bursting with juicy blackberries, zesty ginger, and rich cream.
Ingredients:
  • 2 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground ginger
  • 5 tablespoons cold unsalted butter, cut into 1/4-inch pieces
  • 1 cup blackberries
  • 1 cup heavy cream
  • 2 tablespoons turbinado sugar, or as needed
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Combine flour, sugar, baking powder, salt, and ginger in a large bowl and whisk together. Use a pastry blender to cut in the butter. Gently fold in the blackberries. Pour in the heavy cream and mix until the batter just comes together, being careful not to overmix and mash the berries.
  • Shape the dough into 6 generously sized scones, then generously sprinkle with turbinado sugar before transferring onto a baking sheet.
  • Bake in the oven until scones are golden brown on top, about 15-20 minutes.
