Creamy blackberry jam and cream cheese on a crisp cracker crust, transformed into irresistible cheesecake bites. Delicious dessert!
Ingredients:
  • 15 graham cracker squares
  • 1/2 cup sliced almonds
  • 1 1/4 cups sugar
  • 1/3 cup butter or margarine, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon vanilla
  • 3 eggs
  • 1/3 cup seedless blackberry jam
  • 36 fresh blackberries
  • Fresh mint leaves, if desired
Instructions:
  • Preheat oven to 350°F. Line a 9-inch square pan with foil, leaving a 1-inch overhang on two opposite sides, then coat the foil with cooking spray. In a food processor, pulse crackers, almonds, and 1/4 cup of sugar until finely ground. Add melted butter and pulse until mixture resembles wet sand. Press evenly into the bottom of the pan.
  • Bake until golden brown, then cool. In a large bowl, use an electric mixer to beat cream cheese, 1 cup sugar, flour, and vanilla until smooth. Gradually mix in eggs one at a time. Pour over crust.
  • Drop small spoonfuls of jam over the filling and gently swirl with a knife. Bake for 35 to 40 minutes or until the mixture is set. Let it cool in the pan on a cooling rack for 1 hour, then cover and refrigerate for 2 hours. Use foil to lift the cheesecake out of the pan and cut it into 6 rows by 6 rows. Garnish each cheesecake bite with a blackberry and mint leaf. Store the cheesecake bites covered in the refrigerator.
