Spicy blackberry jam cakes with creamy frosting.
Ingredients:
  • 1 cup white sugar
  • 6 eggs
  • 1 cup buttermilk
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground allspice
  • 1 tablespoon ground cloves
  • 1 cup seedless blackberry jam
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C), then prepare 3 (9 inch) cake pans by greasing and flouring them. Next, combine the flour, baking soda, cinnamon, allspice, and cloves in a bowl and set it aside.
  • In a large bowl, whisk together the butter and sugar until creamy and fluffy. Gradually mix in the eggs one by one. Alternately fold in the flour mixture and buttermilk. Gently blend in the blackberry jam. Transfer the batter into the prepared pans.
  • Place the cake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
