Delicious lemon-blackberry scones, homemade in under an hour, perfect for tea time.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup unsalted butter, frozen
  • 1/2 cup sour cream
  • 1 tablespoon grated lemon peel
  • 1 container (6 oz) fresh blackberries
  • 1 tablespoon sugar
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with parchment paper.
  • Combine flour, 1/3 cup sugar, baking powder, salt, and baking soda in a large bowl. Grate butter into the mixture, then use your fingers to blend until it resembles coarse meal. In a separate small bowl, whisk together sour cream, egg, and lemon peel. Add the sour cream mixture and blackberries to the flour mixture. Stir until the dough comes together, keeping in mind that some berries may get slightly crushed.
  • On a lined cookie sheet, gently shape the dough into a 7-inch round. Cut it into 8 wedges and slightly separate them. Evenly sprinkle 1 tablespoon of sugar on top.
  • Bake for 14 to 16 minutes until lightly golden. Allow to cool for 5 to 10 minutes before serving warm.
