Irresistible mini cheesecakes with crunchy graham cracker crusts and luscious cherry topping - a party favorite!
Ingredients:
  • 2 (8 ounce) packages cream cheese
  • 0.5 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1.125 cups graham cracker crumbs
  • 2 tablespoons white sugar
  • 1 pinch ground cinnamon
  • 0.25 cup butter
  • 1 (21 ounce) can cherry pie filling
Instructions:
  • Preheat your oven to a toasty 350 degrees Fahrenheit (175 degrees Celsius), then line your muffin tins with cupcake liners.
  • Prepare the filling by mixing cream cheese and 1/2 cup sugar in a medium bowl. Add eggs, vanilla, and lemon juice, then blend until well combined.
  • For the Crust: Mix together the crumbs, 2 tablespoons of sugar, and cinnamon. Blend in the butter until the mixture forms small crumbs. Press a spoonful of the crust mixture into each cupcake liner. Layer the filling on top of the crusts.
  • After baking for 30 minutes in the preheated oven, generously top each fresh tart with cherry pie filling. Chill the tarts in the refrigerator for 30 minutes to an hour before serving.
