Achieve bright, crisp broccoli perfect for freezing or cooking by blanching it properly. Here's how.
Ingredients:
  • 1 bunch broccoli (any weight)
Instructions:
  • Prepare the broccoli: Cut the broccoli crowns into uniform florets, aiming for a width of around 1 1/2 inches at the top for optimal cooking and storage.
  • Fill a large pot 3/4 full with water and bring it to a rapid boil over high heat. For quick boiling, cover the pot with a lid. Adjust the amount of water based on the quantity of broccoli you plan to blanch, using one gallon per pound of vegetables according to the National Center for Home Food Preservation.
  • Gently drop the broccoli florets into the boiling water using a spider or slotted spoon.
  • Bring the water back to a boil within 1 minute, then cook the broccoli for 3 minutes.
  • Create an invigorating ice water bath by filling a large bowl 3/4 full with icy cold water while the broccoli is cooking.
  • Chill the broccoli: Transfer the broccoli to an ice bath using a spider or slotted spoon. Allow the broccoli to cool in the ice water for 3 minutes.
