Ingredients:
  • Olive oil spray
  • 4 slices short cut bacon
  • 4 thin slices sourdough bread
  • 1/2 large firm ripe avocado
  • 19.80 gm low fat mayonnaise
  • 1 vine ripened tomato, sliced
  • 4 baby cos leaves
Instructions:
  • Preheat a large non-stick frying pan over high heat and spray with oil. Cook bacon for 2 minutes on each side until golden and crisp.
  • Toast the bread until golden. Mash the avocado in a small bowl and spread it over 2 slices of toast. Spread mayonnaise over the other 2 slices of toast. Top the avocado with 2 slices of bacon, tomato, and 2 baby cos leaves. Complete the sandwich with the other slice of toast on top. Serve immediately.
