Impress guests with a fancy blood orange and jalapeno spinach salad.
Ingredients:
  • 4 blood oranges, divided
  • 0.25 cup rice vinegar
  • 0.25 cup olive oil
  • 2 tablespoons honey
  • 1 large jalapeno pepper, seeds and ribs removed
  • 0.5 teaspoon Dijon mustard
  • 1 pinch salt and ground black pepper to taste
  • 4 cups loosely packed fresh spinach
  • 4 tablespoons pomegranate arils
  • 4 tablespoons coarsely chopped pecans
  • 2 slices cooked bacon, crumbled
  • 4 tablespoons crumbled feta cheese
Instructions:
  • Zest 2 blood oranges and squeeze juice from 1. Blend the zest, juice, rice vinegar, oil, honey, jalapeno, and mustard until smooth. Season the dressing with salt and pepper. Keep it aside.
  • Peel and discard the white pith from the 2 blood oranges, then slice them horizontally.
  • On each of the 4 salad plates, arrange an equal portion of spinach. Layer sliced blood orange evenly over the spinach. Sprinkle pomegranate arils, pecans, bacon, and feta cheese over each salad. Finish by drizzling vinaigrette evenly over each salad and serve right away.
