Delicious one-pot BLT pasta - a quick and easy summer dinner bursting with smoky bacon and fresh tomatoes.
Ingredients:
  • 3 1/2 cups Progresso™ chicken broth
  • 8 oz uncooked penne pasta (2 1/3 cups)
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 bag (5 oz) fresh baby spinach
  • 1 1/2 cups grape or cherry tomatoes, halved
  • 1 package (12 oz) applewood smoked bacon, cooked and coarsely chopped
  • Shredded Parmesan cheese, chopped fresh chives or chopped fresh basil leaves, if desired
Instructions:
  • In a 4-quart Dutch oven, bring chicken broth, pasta, and black pepper to a boil over high heat. Lower the heat to medium and simmer without the lid for 11 to 14 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
  • Lower the heat to medium-low and mix in the butter until it's completely melted. Slowly incorporate the spinach, stirring consistently until it begins to wilt. Take it off the heat, then fold in the tomatoes and bacon. Finish by sprinkling with the remaining ingredients.
