Turn those sandwich ingredients into a delicious salad in under 30 minutes, serving six people.
Ingredients:
  • 1 1/4 cups uncooked medium pasta shells
  • 4 slices bacon
  • 1/4 red onion, thinly sliced (1/4 cup)
  • 1 pint (2 cups) cherry tomatoes, cut in half or 3 roma tomatoes, sliced
  • 1/2 cup reduced-calorie ranch dressing
  • 6 leaves romaine or iceberg lettuce
Instructions:
  • Prepare the pasta according to package instructions, without adding salt. Then rinse the cooked pasta with cold water and drain thoroughly.
  • In a 10-inch nonstick skillet, cook the bacon over medium heat for about 4 minutes until crispy, turning occasionally. Drain on paper towels and crumble into small pieces or cut into thirds.
  • Combine pasta, onion, and tomatoes in a large bowl. Gently toss with dressing until coated. Place a lettuce leaf on each of 6 salad plates and evenly distribute pasta mixture. Sprinkle with bacon before serving.
