"Make ahead this refreshing and zesty macaroni BLT salad with avocado, tomato, scallions, bacon, and lemon-chile dressing for a burst of flavor."
Ingredients:
  • 1 (7 ounce) package elbow macaroni
  • 1 pound bacon, diced
  • 2 tablespoons lemon juice
  • 1 large avocado, diced
  • 0.5 cup creamy salad dressing (such as Miracle Whip®)
  • 0.33333334326744 cup tomato-based chile sauce
  • 0.25 cup lemon juice
  • 2 teaspoons chicken bouillon granules
  • 2 teaspoons white sugar
  • 1 large tomato - cored, seeded, and diced
  • 0.5 cup sliced green onion tops
  • 6 cups shredded lettuce
Instructions:
  • Boil a large pot of lightly salted water. Cook the elbow macaroni until al dente, about 8 minutes. Drain and rinse under cold water. Set aside.
  • Crisp bacon in a large skillet over medium heat for about 7 minutes. Use a slotted spoon to transfer to paper towels to drain. Refrigerate once cooled.
  • Drizzle the diced avocado with 2 tablespoons of fresh lemon juice.
  • In a large bowl, mix mayonnaise, creamy dressing, chile sauce, 1/4 cup lemon juice, chicken bouillon, and sugar. Add in cooked macaroni, avocado, tomato, and green onions. Cover and refrigerate for at least 6 hours until well chilled. Just before serving, stir in lettuce and reserved bacon.
