Savory blue cheese popovers: Golden, flaky crust with a hollow center, a foolproof snack by Chef John.
Ingredients:
  • 5 large eggs, at room temperature
  • 2 cups whole milk, at room temperature
  • 0.25 cup vegetable oil
  • 1 teaspoon kosher salt
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon unsalted butter, softened
  • nonstick vegetable oil cooking spray
  • 0.5 cup crumbled blue cheese, or to taste
Instructions:
  • Combine eggs, milk, flour, oil, salt, and cayenne in a large measuring cup or mixing bowl and whisk until just blended.
  • Cover the bowl with plastic wrap and let it rest at room temperature for 1 hour, or chill in the refrigerator for 2 to 3 hours, or overnight for best results.
  • Prepare the muffin tin by lightly greasing 14 nonstick cups with butter and a quick mist of cooking spray.
  • Gently mix the batter and fill each muffin cup almost to the top, then evenly sprinkle blue cheese on top.
  • Preheat the oven to 450 degrees F (230 degrees C. Place the muffin pans with a drip pan underneath. Bake for 30 to 35 minutes until popovers are golden brown and fully puffed.
  • Pierce each popover with a knife to release steam. Serve piping hot.
