Blue cornbread: Sweet and cakey with a twist of blue cornmeal.
Ingredients:
  • 1 cup blue cornmeal
  • 5 teaspoons baking powder
  • 1 pinch salt
  • 2 eggs, beaten
  • 1 cup milk
  • 0.5 cup butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x9 inch baking dish.
  • In a bowl, combine cornmeal, flour, baking powder, sugar, and salt, then sift the mixture a total of 3 times.
  • Combine the eggs and milk with the cornmeal mixture. Place the butter in the baking dish to melt in the preheated oven. Stir the hot melted butter into the cornmeal mixture, then transfer it to the baking dish.
  • Place the dish on the center rack of the oven that has been preheated. Bake for 30 to 35 minutes until the cornbread edges detach from the sides and a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes before slicing.
