Refreshing cucumber salad tossed in creamy dill blue cheese dressing.
Ingredients:
  • 2 large cucumbers, peeled and sliced in half lengthwise
  • 0.25 cup white onion, minced
  • 2 tablespoons white wine vinegar
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon white sugar
  • 1 pinch white pepper, or to taste
  • 0.5 cup crumbled blue cheese
Instructions:
  • Using a spoon, remove the seeds from the cucumber halves. Slice the cucumbers into thick half moons and place them on a plate lined with paper towels. Sprinkle 1/2 teaspoon of salt over the cucumber slices and let them sit.
  • Combine onion, sour cream, white wine vinegar, dill, sugar, and white pepper in a bowl; mix thoroughly. Gently fold in the blue cheese. Pat cucumber slices dry and add to the salad. Chill for at least 1 hour. Season with salt just before serving.
