Tropical no-bake pie with pineapple rum, blue curacao, and a chocolate wafer crust. Perfect for happy hour!
Ingredients:
  • 24 thin chocolate wafer cookies
  • 1/4 cup butter, melted
  • 1 can (14 to 15 oz) cream of coconut
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1 cup pineapple juice
  • 1/4 cup blue Curacao liqueur
  • 1/4 cup pineapple rum
  • 1/3 cup cornstarch
  • 2 egg yolks
  • Sweetened whipped cream
Instructions:
  • Prepare a 9-inch glass pie plate by spraying it with cooking spray. In a food processor, pulse cookies until they form fine crumbs. Add melted butter and blend until combined. Press the crumb mixture into the bottom and up the sides of the pie plate. Set aside.
  • In a large saucepan, combine all remaining ingredients except for whipped cream. Cook over medium heat, continuously stirring with a whisk until the mixture thickens and comes to a boil. Let it boil and stir for 1 minute. Remove from heat and pour the filling into the crust. Allow it to cool for 20 minutes.
  • Cover the filling with plastic wrap to keep it smooth. Chill in the refrigerator until firm, approximately 4 hours.
  • When ready to enjoy, slice the chilled pie and generously dollop with whipped cream. Keep the rest of the pie covered and refrigerated for later indulgence.
